Andrea first boils potatoes and drains the water. She goes on to slit long red peppers down the middle, de-seeds them and washes them thoroughly. She also keeps certain other ingredients ready. Later, she peels and mashed the potatoes. In a pan, she heats the oil and adds cumin seeds, chopped onions, green chillies, ginger and spice powders. She then adds the mashed potatoes to this mixture and combines both well. After this stuffing is cooked, she proceeds to fill the red peppers with it. She first roasts these stuffed peppers in a pan and then bakes them, covered, in an oven. While they cook, she prepares boondi raita and rotis from scratch. Finally, she removes the peppers and savours them with the phulkas. Watch the full video below.
