Kofta kadhi simply refers to a kadhi-like preparation with the addition of fried kofta balls. These koftas may be made using vegetarian ingredients or non-veg ones like chicken mince. The recipe below is for a besan kadhi with lauki (bottle gourd) koftas. It is packed with flavour and is quite simple to make. Try it for yourself and see.

Is Kofta Kadhi Healthy?

Regular besan kadhi (or one with veggies) is actually quite nutritious. It is rich in fibre, protein and minerals. Its relative calorie count is not very high either. However, the below version of kadhi scores less on the health criteria as it contains deep-fried koftas. Hence, rather than a healthy meal, consider this dish for a special indulgence. It is sure to impress all those who taste it.

How To Make Veg Kofta Kadhi At Home | Quick And Easy Recipe For Lauki Kofta Kadhi

In a large bowl, mix grated lauki, besan, chopped green chillies, ginger, garlic, coriander leaves, salt, chilli powder and other masalas. Combine thoroughly to form a semi-dry mixture. Heat oil in a kadhai and deep-fry small portions of this kofta mixture. Set aside. Next, in an unheated kadhai, combine besan with curds to start making the kadhi base. Add haldi, chilli powder, sugar and salt. Continue churning, add in water and mix well. Place the vessel on a stove and bring the kadhi base to a boil. Take care to stir continuously.

Later, lower the heat and pop in the lauki koftas. Allow the kadhi and koftas to cook together. Heat oil and prepare a tadka of mustard seeds, cumin seeds, asafoetida, Kashmiri chillies and other ingredients. Pour this tadka over the kofta kadhi and cover the vessel. Garnish with coriander leaves after a few minutes. Serve immediately with jeera rice or rotis.
