We came across this recipe video for a multipurpose sabji masala on the YouTube channel ‘Cook With Parul’ run by food blogger Parul Gupta.

In the video, Parul talks about the importance of measuring ingredients before making any kind of masala and also insists that we roast these spices. Roasting in a low flame will bring out the essential oils in these ingredients along with making them much more aromatic. You may use the masala in sabji, dal, chole, rajma, or any other kind of preparation. The masala includes coriander seeds, cumin seeds, black pepper, caraway seeds, fenugreek seeds, cloves, green cardamom, and black cardamom. Roast these slightly before adding them to the mixer jar. Once they are cooled and put inside the jar, add more ingredients like salt to help preserve the masala, cornflour to increase the shelf life of the masala by keeping it dry, dried mint powder for the extra zing, and turmeric for a nice shade to the masala. Grind into a fine powder and store in an airtight container. Parul even prepares an aloo matar dish with the help of the masala.
