If we were to make a list of our all-time favourite Indian snacks, medu vada would definitely be one of the top contenders. This South Indian sensation, which appears like a fried doughnut, is a spongy snack with a crispy golden exterior. It is typically paired with sambhar or chutney. You can have it for breakfast or for snack, or anytime those cravings kick in. If you think the process of making these vadas is too cumbersome, you are not alone. But what if we tell you that there could be a way in which you can make this vadas in under 10 minutes? Yes, you heard us. Here’s a recipe of instant medu vada by food blogger and YouTuber Alpa Modi:

1. Take half a cup of curd and add one cup of water to it. Give everything a good stir until you reach a buttermilk consistency. Keep it aside. 

2. Take a boiled potato and mash it. Keep it aside. 

3. Take a kadhai and add oil. Once it is heated, add some hing

4. Next, throw in the butter milk and mashed potatoes, give everything a good mix.

5. Now add fine sooji to this buttermilk mix. Give everything a good mix. Make sure there are no lumps. Add salt as per taste. 

6. Add cumin seeds, followed by fresh coriander leaves, green chillies, chopped curry leaves and finely chopped onions. Mix everything. 

7. Mix till the water evaporates and you are left with a .Do not overmix or burn the mix.  

8. Cover the lid and turn off the flame. Uncover after five minutes and take the dough on a plate. Allow it to cool. 

9. Grease your palms and knead the dough until you get a soft, smooth dough. 

10. Pull out a  small portion from the dough, roll it using your hand, press it gently between your palms. With the help of your finger poke a hole in between and give it the characteristic medu vada shape. Repeat the same with rest of the dough. 

11. Deep fry the medu vadas. Fry until golden and crispy.  

12. Place a paper towel on a plate, transfer the medu vadas on to the plate. Serve hot with the side of your favourite chutney, ketchup or sambhar.
