Bhindi, also known as okra or lady finger, is one of the most popular vegetables in Indian cuisine. It is super easy to cook and extremely versatile, which makes it a household favourite. Bhindi is used in various culinary preparations and is also savoured as a standalone dish. While we are familiar with dishes like kurkuri bhindi, bharwan bhindi and more, there are so many other interesting variations that are worth a try. One such interesting variation is the delicious dahi masala bhindi! As the name suggests, this bhindi sabzi is made with yogurt and flavourful masalas.

In this recipe, shallow-fried bhindis are cooked in a creamy and tangy yogurt-based curry. This dahi masala bhindi sabzi is oozing with flavour and makes for a delicious lunch meal. It tastes best when paired with some roti or naan. This bhindi recipe will definitely be a hit among people of all age groups. Dahi Bhindi Masala Recipe: How To Make Dahi Bhindi Masala  

To begin with, first, take bhindis, wash and dry them and slit from the middle. In a bowl, add curd, coriander powder, cumin powder, Kashmiri red chilli powder, kasuri methi and fennel seeds. Mix well. Now, heat oil in a kadhai set on medium flame. Add the bhindis and shallow fry them for around 3-4 minutes. 

Once the bhindi starts becoming soft, add salt, give it a nice mix, and transfer to a plate. In the same kadhai, add some more oil, cumin seeds, hing, chopped garlic and chopped onions. Fry on high flame until the onions turn golden brown in colour. Once done, reduce the flame to low and add slit green chillies. Next, add ginger-garlic paste, haldi, red chilli powder and water. Mix well. 

Add chopped tomatoes and salt. Combine everything together. Cover the kadhai with a lid and allow it to cook for 5-6 minutes. Now, switch off the flame and allow the mixture to cool down. Add the prepared curd mix and keep the flame on medium-high. Cover the kadhai again and allow the dahi to cook for some time. Finally, add the shallow-fried bhindis and mix well. Add garam masala, 4-5 tbsp of water and fresh coriander leaves. Dahi masala bhindi is ready!
