Whenever we are looking for options to cook for dinner, most of the time we are left confused and resort to the same old aloo ki sabzi. Aloo curry is one of the most cooked dishes in Indian households. It is easy to make and is a safe bet too because nobody in the family will reject it. But if you too are bored of the same flavours, why not try something different this time. One of the reasons why aloo curry turns up on our menu is there are times when our pantry is lacking any fresh vegetables. If you are facing the same issue right now, we have a recipe that doesn’t require any vegetable. You can present the same aloo curry to your family but in the guise of besan.  

Surprised? Your taste buds will be surprised too when you’ll have the first bite of this unique but delicious besan aloo curry. We are calling it besan aloo curry because besan is used to make aloo-like sabzi which is cooked in an onion-tomato gravy. Aloo is not really used in it. This recipe was shared by food vlogger Reshu on her channel ‘Cooking With Reshu’.  

Besan Aloo Curry Recipe I How To Make Besan Aloo Curry Without Aloo:  

To besan, add salt to taste, red chilli powder, turmeric powder, a dash of soda, some oil and ghee. Mix everything together. Now add some curd to it to knead the dough. Add some water sparingly to help knead it properly. Let it rest for just 5 minutes. Grease your hands with oil and make small roundels from the dough. Toss the roundels in boiling water for 8-10 minutes. Keep stirring in between. Turn off the gas and the roundels cool down in the water only. Then cut them into small pieces to make besan aloo.

Now make the curry. Roast bay leaves, cumin seeds, hing, ginger and garlic in some oil. Add grated onion and green chillies and roast till brown. Add red chilli powder, turmeric powder and coriander powder, let the spices roast for 1-2 minutes. Then add tomato puree and salt and cook till oil separates. Add some water and curd, keep stirring till water boils. Add more water to make curry. You can add the same water that was used to boil besan aloo. Cook for around 5 minutes. Add in boiled besan aloo and cook further for around 5 minutes. Serve after adding garam masala and coriander leaves.
