Whether you are in Kashmir or Kanyakumari, the breakfast buffet is incomplete without staples like idli, dosa, sambhar, chutney and medu vada. The masaledaar flavours of the sambhar paired with the earthy and crispy dosa sings to the heart of every foodie! These South Indian delicacies are unarguably one of the most loved dishes of Indian cuisine. They go beyond the Indian breakfast; street vendors have made these classic dishes an important part of street food! But the dosas that are being served on the street are no ordinary dosa, they have been spiced up through experimentations to make unique dishes. One such street experiment resulted in the birth of fire handi dosa. Are you wondering what it is? Then take a look:

At the starting of the video, the street vendor begins with making an ordinary crispy dosa. Then he starts adding different toppings, such as tomatoes, onion, coconut chutney etc. Then, the vendor takes a huge chunk of butter and melts it with a makeshift flame thrower on top of the toppings. He mixes all of this and garnishes a generous amount of cheese. Later, he caramelises the toppings with the flamethrower. He adds the caramelized toppings in a handi, adds more butter and cheese! Finally, he places the dosa on top of the handi and sets the dosa on fire. The video was uploaded by Instagram food blogger @oye.foodieee. It has garnered 2 million views and 125k likes. This fire handi dosa can be found at Ayyer Ji Dosa in Geeta Colony, Delhi.
