Oil-Free Pickle Recipe: This Healthy Garlic Achaar Is Perfect For Weight Loss Diet

Indian pickles have a huge fan following, not just in India but all across the globe. The eclectic flavours of the achaars are enough to amp up any bland meal. We all love achaar, but when we see a thick layer of oil floating on top of them, our brains sends our mind into a frenzy. Oil is something all weight-watchers want to avoid. So for them, we have brought a recipe of an achaar that is completely oil-free. This garlic pickle is full of flavours and spice, but contains no oil and salt; yet it smells and tastes delicious.  

We found this oil-free garlic pickle recipe on YouTube channel ‘Cooking With Reshu’ and found it perfect for our weight loss diet. This achaar is made with the traditional technique of mixing all the whole ingredients together and letting it seep in acidic liquid for days to ferment. The combination of garlic, ginger, kalonji and whole red chillies is truly stellar. But remember to roast the kalonji first because it emanates an invigorating aroma that will make this achaar recipe winsome.  

Here is the step-by-step recipe of no-oil garlic pickle.  

Oil-Free Garlic Pickle Recipe I How To Make No-Oil Lehsun Achaar: 

Take 200 gms garlic and peel them and let dry them completely. Peel and cut ginger into small round slices. First roast some kalonji for 2 minutes. Put some whole red chillies in a bowl. Add garlic, ginger and dried raw mango, also called khattai. Add a good amount of ganna (sugarcane) sirka, and kalonji. Mix everything well. Store the mixture in a jar for 10 days. Stir it once every day. Consume it as an accompaniment after 10 days. If you want, you can sprinkle some salt over it while serving.
